This tea can be called Young Hyson, Chunmee or Precious Eyebrow. The tea comes from southwest China and is made from young leaves gathered in early spring before the first rains fall. It is sometimes called Young Hyson, after a young English tea merchant called Phillip Hyson. The Chinese name Chunmee comes from the shape the leaf takes on after processing.
The leaves produce a greenish-yellow liquor, with a pleasant fresh taste and good body.
To Brew
Allow one teaspoon per 8oz of water. Infuse for 2 - 3 minutes at 76 degrees Celsius or 170 degrees Fahrenheit. Be careful not to overbrew as this will make the tea bitter. Drink without milk or sugar.
